Beef, Tomato And Cheese Croquets
- 1 pound ground beef
- 4 slices bacon finely chopped
- 1 small potato grated, excess liquid drained
- 1 onion small, grated
- 1 large egg lightly beaten
- 1 tablespoon worcestershire sauce
- 1 tablespoon fresh parsley chopped
- 2 tablespoons olive oil
- 4 medium potatoes peeled, cut into small chunks, par-boiled
- 14 ounces pumpkin cut into small chunks
- 1 tomato sliced
- 1 cup mozzarella grated
- 3 sprigs fresh basil leaves
- Preheat oven to 400u0b0F.
- In a bowl, combine ground beef, bacon, grated potato, onion, egg, Worcestershire sauce and parsley. Season to taste. Form into 8 even-sized croquets. Chill for 20 mins.
- Brush base of a large baking dish with oil. Arrange croquets in dish. Surround with potatoes and pumpkin. Drizzle with remaining oil. Season to taste.
- Bake for 20 mins. Place a slice of tomato on each croquet and sprinkle with cheese. Bake for a further 10-15 mins. Serve scattered with basil leaves.
