Japanese Shrimp & Noodles

  1. Cook noodles according to package directions.
  2. Heat oil over medium high heat in a skillet.
  3. Rotate skillet to coat the entire bottom.
  4. Add shrimp, garlic and ginger and cook about 3 minutes, stirring often, until shrimp are pink.
  5. Remove from skillet.
  6. Put carrots, green beans, 1 c of the broth, soy sauce and sugar in the skillet.
  7. Heat to boiling.
  8. Cover and cook over medium heat 4 - 6 minutes, stirring occasionally, until the vegetables are tender.
  9. Add shrimp back to pan and stir in lemon juice.
  10. Mix cornstarch and remaining broth until smooth.
