Beef, Onion And Haloumi Kebabs
- 1/2 cup red wine
- 2 tablespoons olive oil
- 1 tablespoon wholegrain mustard
- 2 teaspoons barbecue sauce
- 1 1/2 pounds sirloin steak trimmed, cubed
- 2 red onions large, peeled, cut into eighths
- 8 3/4 ounces halloumi cheese cubed
- 1 pound cherry tomatoes halved
- 2 tablespoons fresh basil leaves torn
- 1 tablespoon balsamic vinegar
- mixed greens to serve
- 7 ounces long-grain rice white, cooked
- Whisk together red wine, olive oil, mustard and barbecue sauce. Add steak and toss to coat well. Chill for 5-10 mins.
- Preheat a grill, frying pan or cast iron griddle over medium heat. Thread steak onto 8 soaked skewers, alternating with red onion and halloumi cheese.
- Cook kebabs, basting occasionally, for 4-5 mins per side, or until cooked to your liking. Let rest, covered.
- Meanwhile, in a serving bowl, toss together tomatoes, basil, vinegar and mixed greens. Season. Serve kebabs with rice and salad.
