Healthy Dinner: Poached Egg With Smoked Salmon And Spinach Recipe

  1. Set a medium or small pan on medium heat and add your spinach (if frozen defreeze it first) and stir it around with some salt, black pepper and butter. Set aside.
  2. Prepare a large pot and boil a full kettle. Put your pot on high heat and add some water from the tap before the kettle is done. Add sea salt and some white wine vinegar to the liquid. When the water is boiling with a large spoon - stir well in one direction. A swirl will be created and now crack your egg and drop it inside of it. This will help your poached egg not to break and to be nice and compact. Let it boil for about 2 minutes or more if you like but 2 minutes seems like the optimum for me (it is ok to heat a raw yolk but you should always ensure that the whites are cooked).
  3. Now you can start to plate you food. Place your spinach as the base. Your smoked salmon next. Top it up with you poached salmon. Now only decorate with your dill and season with sea salt and black pepper. nnEat immediately.nnEnjoy. nnTIP: you can accompany you meal with your favourite bread if you wish.
