Chicago-Style Salad

  1. Fry the sausage until golden brown. Remove from pan and blot to remove excess grease.
  2. Mix the lettuce, tomato, onion, and pickles together in a salad bowl. Stir in the sausage.
  3. Whisk together the pickle brine, vinegar, mustard, olive oil, salt, and pepper in a separate bowl. Drizzle over the salad and stir to coat.
  4. Serve, sprinkling with cheese.
