Chicago-Style Salad
- 2 sausages chopped
- 7 tablespoons chihuahua cheese cubed, may substitute a mild cheddar or colby
- 6 leaves romaine lettuce torn into bite-sized pieces
- 1 tomato diced
- 1/4 red onion cut into thin half moons
- 1/2 pickles sliced
- 2 tablespoons pickle brine
- 1 teaspoon white vinegar
- 2 tablespoons mustard
- 2 tablespoons olive oil
- salt and ground black pepper
- Fry the sausage until golden brown. Remove from pan and blot to remove excess grease.
- Mix the lettuce, tomato, onion, and pickles together in a salad bowl. Stir in the sausage.
- Whisk together the pickle brine, vinegar, mustard, olive oil, salt, and pepper in a separate bowl. Drizzle over the salad and stir to coat.
- Serve, sprinkling with cheese.
