Chicken, Cheese & Potato Casserole
- 1 3/4 cups red potatoes diced
- 2 tablespoons dijon mustard
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 ounces chicken breast raw, diced
- 2 slices bacon cooked
- 1 cup Crystal Farms Shredded Cheddar Cheese
- Preheat oven to 400u0b0 F.
- In a medium bowl, combine potatoes, Dijon mustard, olive oil, salt and pepper. Mix well then transfer to a 9-inch x 9-inch baking pan.
- Bake for 20 minutes, stir the potatoes and bake for an additional 15 minutes.
- While potatoes are baking, toss chicken with 1/2 cup of shredded Cheddar cheese, bacon and green onions.
- Remove pan from oven and add in the chicken, shredded Cheddar cheese, bacon and green onions. Toss the items together to equally distribute the remaining ingredients.
- Top with remaining 1/2 cup shredded Cheddar cheese and continue baking for 15 minutes or until the potatoes are tender and the chicken reaches an internal temperature of 165u0b0 F.
- Serve.
