Chicken, Cheese & Potato Casserole

  1. Preheat oven to 400u0b0 F.
  2. In a medium bowl, combine potatoes, Dijon mustard, olive oil, salt and pepper. Mix well then transfer to a 9-inch x 9-inch baking pan.
  3. Bake for 20 minutes, stir the potatoes and bake for an additional 15 minutes.
  4. While potatoes are baking, toss chicken with 1/2 cup of shredded Cheddar cheese, bacon and green onions.
  5. Remove pan from oven and add in the chicken, shredded Cheddar cheese, bacon and green onions. Toss the items together to equally distribute the remaining ingredients.
  6. Top with remaining 1/2 cup shredded Cheddar cheese and continue baking for 15 minutes or until the potatoes are tender and the chicken reaches an internal temperature of 165u0b0 F.
  7. Serve.
