Potato Bacon Frittata

  1. Cook bacon in skillet until browned.
  2. Remove and drain; reserve none but 4 tablespoons bacon fat.
  3. Cook spuds, onion, green pepper and 1/2 teaspoon salt in bacon fat until potatoes are tender, about 15 minutes.
  4. Remove from heat and stir in bacon. Beat together eggs, cheese, milk, baking mix, butter and 1/2 teaspoon salt.
  5. Pour egg mixture into greased quiche dish or 9 x 9-inch baking pan.
  6. Spoon potato mixture on top of eggs.
  7. Bake at 375u0b0 for 20 to 30 minutes, until set.
  8. Remove Frittata from oven.
