Cabbage, Bacon And Carrot Gratin
- 1 cabbage trimmed, cut into 8 wedges
- 12 small carrots peeled
- 8 slices smoked bacon
- 2 tablespoons butter or margarine
- 2 tablespoons all-purpose flour
- 3/4 cup heavy cream
- 1 vegetable bouillon cube
- 5 1/4 ounces gouda cheese grated
- fresh chervil chopped, to garnish
- Preheat oven to 350u0b0F. Cook cabbage in boiling salted water for 8 mins. Cook carrots in boiling salted water about 5 mins until soft. Drain cabbage and carrots. Wrap each cabbage wedge with 1 slice bacon. Arrange in a greased baking dish and place carrots between them.
- Meanwhile, melt butter in a pan, add flour and cook slightly. Add 1 cup water and cream. Bring to a boil, add bouillon cube and simmer 2 mins. Season, add 2 oz grated cheese and stir until melted. Pour over cabbage and carrots and sprinkle remaining cheese over top. Bake for 35 mins. Serve garnished with chervil.
