Sophie'S Energy Bites
- 1 cup rolled oats
- 1/4 cup hemp hearts
- 2 tablespoons ground flax seeds
- 1/2 cup mini chocolate chips
- 1/2 cup nuts chopped or raisins/dried cranberries
- 1/2 cup peanut butter unsweetened, or other nut butters
- 1/4 cup honey
- 2 tablespoons coconut oil or cocoa butter, melted
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 1 pinch chili powder
- 1/4 cup cocoa powder or chocolate protein powder
- In a medium bowl, whisk peanut butter, honey, coconut oil (or cocoa butter), vanilla, sea salt, and chili powder.
- Add oats, hemp hearts, flax seeds, mini chocolate chips and nuts.
- Mix until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into ball and enjoy!nnThese also make great granola bars. You can put them in a square pan then put in the refrigerator. All you need to do is cut them into bars and wrap them in saran wrap.nnStore in an airtight container. The bars will last 1-2 weeks in the refrigerator or for months in the freezer (if they last that long). Yum!
