Speculoos Cupcakes
- 1/2 cup softened butter
- 7 15/16 tablespoons granulated sugar
- 2 eggs
- 1 1/8 cups flour
- 1 1/4 teaspoons baking powder
- salt
- 4 tablespoons milk
- 1/4 teaspoon ground cinnamon
- 4 3/8 ounces speculoos spread
- 1 15/16 cups mascarpone
- 4 tablespoons heavy cream
- Preheat oven to 350 degrees Fahrenheit.
- In a bowl, mix the softened butter and sugar until it is pale.
- Add the eggs, one at a time while mixing.
- Add the flour, baking powder, and a pinch of salt. Mix
- Stir in the milk and the cinnamon. Mix.
- Fill the muffin cups 2/3 full with the batter. Put 1 teaspoon of Speculoos spread in the middle of each cupcake.
- Bake them for 20 minutes at 350 F.
- To prepare the Speculoos icing, whisk 125 grams of Speculoos spread with the mascarpone and heavy cream at low speed.
- Using a piping bag, decorate the cooled cupcakes as you wish.
