Cod A Braz

  1. Preheat oven to 180 degrees Celsius.
  2. Bake cod, drain, remove the bones, and shred. Set aside.
  3. In a pan with olive oil, saute the onion, garlic, and bay leaf (halved and without the string).
  4. Add the carrot, and cook 1 minute.
  5. Turn off the heat, and add the shredded potatoes, and the cod.
  6. Whisk the eggs with some water (about 3 to 4 tablespoons), a pinch of nutmeg, pepper, and parsley (do not add salt).
  7. Mix well in the previous mixture.
  8. Place in an ovenproof platter brushed with olive oil. Press down for a compact mixture that can be served sliced.
  9. Bake for 15 to 20 minutes.
  10. Top with black olives, and a few more sprigs of parsley.
  11. Serve with a lettuce salad.
