Salmon Cakes With Mango Tartar Sauce
- 60g Mango, cut into small cubes
- 25g Mayonnaise
- 5 g Pickles, chopped
- 9.375g Anmum Vanilla Mango
- 2g Salt
- 1g Pepper
- 300 g. Salmon, cooked & flaked
- 30g Bread Crumbs
- 50g lightly beaten
- 5g Parsley, chopped
- 15g Onion, finely chopped
- 1g Pepper, or to taste
- 1g Salt
- 50g Cornflakes, crushed
- Combine mango, mayonnaise, pickles, Anmum vanilla Mango milk powder, salt and pepper, in a bowl.
- Cover and chill until ready to use.
- Combine flaked salmon, breadcrumbs, eggs, parsley & onion. Season with black pepper & salt to taste, and mix well.
- Divide the mixture into 12 and form into patties. Coat with the cornflakes; pat to firmly adhere. Chill for 20 minutes.
- Heat up oil in a pan and cook until golden brown. Drain well and arrange on a serving platter. Serve with tartar sauce.
