Crispy Salmon With Tartar Sauce
- 2 gherkins finely chopped
- 2 green onions finely chopped
- 2 tablespoons capers finely chopped
- 1 tablespoon chopped parsley finely
- 1 tablespoon lemon juice
- 2/3 cup mayonnaise
- 1 pound salmon fillet
- 2 tablespoons flour
- 1 pinch cayenne pepper
- 1 egg
- 2 teaspoons thyme finely chopped
- 3/4 cup dried breadcrumbs
- oil for frying

- For the tartar sauce, mix the gherkins, onions, capers, parsley, lemon juice, mayonnaise and a little salt and pepper in a medium bowl. Transfer to a small serving dish.
- Cut the salmon into 1/2-inch wide strips. Combine the flour, cayenne pepper and a pinch of salt in a shallow dish. Beat the egg in a second dish. Mix the thyme and breadcrumbs in a third dish. Dust the salmon pieces in the flour, then coat in the egg and finally the breadcrumbs.
- Heat 1/2 inch of oil in a large skillet on medium-high heat. Fry the salmon for 1-2 mins on each side until crisp and golden. Drain on paper towels. Garnish with thyme sprigs. Serve with the tartar sauce and lemon wedges.
