Okonomiyaki (Japanese Savory Pancakes)
- 1/2 cup all-purpose flour sifted
- 2 tablespoons vegetable oil
- 8 3/4 ounces ground pork or chicken
- 6 eggs lightly whisked
- 2 ounces chinese cabbage finely shredded
- 3 spring onions thinly sliced
- 1/2 red pepper deseeded, finely sliced
- sweet soy sauce kecap manis, to serve
- Gradually whisk 2 cups water into flour. Mix until smooth. Cover and chill for 30 mins.
- Meanwhile, heat 2 tsp oil in a large frying pan over high heat. Add ground meat and cook for 4-5 mins, until browned. Set aside.
- Whisk eggs into batter until smooth. Fold in cabbage and 1/2 the spring onions. Heat 1 tsp remaining oil in an 8 inch nonstick frying pan over medium heat. Add 1/4 of the ground meat then pour 1/4 of the batter over top. Cook for 3-4 mins, until golden underneath. Flip and cook for another 2 mins, or until golden. Set aside. Repeat with remaining oil, ground meat and batter.
- Top each pancake with red pepper and remaining spring onions. Drizzle with sweet soy.
