Tamale Pie Casserole
- 1/2 lb. ground pork sausage
- 1 lb. lean ground beef
- 1 clove minced garlic
- 1 c. chopped onion
- 2 c. chopped celery
- 1 (1 lb. 14 oz.) can whole tomatoes, undrained
- 2 c. corn, drained
- 1/2 c. corn meal
- 2 tsp. chili powder
- 1 1/2 c. pitted black olives
- 1 1/2 c. grated Cheddar
- salt and pepper to taste
- Cook sausage in skillet until lightly browned, stirring to keep crumbly.
- Drain excess fat.
- Add ground beef.
- Cook and stir until browned.
- Stir in garlic, celery and onion; cook until crisp-tender.
- Stir in tomatoes with liquid, corn, salt to taste and chili powder.
- Simmer 15 minutes.
- Slowly stir in corn meal and cook until thickened.
- Stir in olives. Pour into greased 2-quart casserole and top with cheese.
- Bake in 350u0b0 oven for 45 minutes.
