Beef Potato Moussaka
- 1 pound ground beef
- pork
- onion 1 med.
- 1 pound tomato sauce
- 1 teaspoon salt
- 1/4 teaspoon nutmeg each
- ground pepper coarsely
- potatoes 4 med., peeled and sliced
- 2 eggs
- 1 cup milk
- 1/2 cup grated cheese Italian type
- Brown beef and onion lightly in large greased saucepan. Add tomato sauce and seasonings, bring to boil, cover and simmer about 20 minutes. Slice potatoes about 1/4" thick and arrange half in greased 2 quart casserole. Cover with meat mixture, then top with remaining potato slices. Beat eggs and milk and pour over mixture. Sprinkle with the cheese and bake in preheated moderate oven, 350 degrees, about 45 minutes. Let stand 15 minutes.
- Version 2: Follow same steps, but skip the eggs/ milk mixture. Instead of cheese, use a second layer of potatoes and pour some tomato sauce on top to keep the potatoes moist. Keep dish covered in the oven. For a different taste, try a mixture of basil, parsley, thyme and oregon instead of nutmeg. For yet another variation, use sliced raw eggplant instead of one (or both) potato layers.
- Serve warm with cold sour cream or yogurt.
