Meatloaf Topped With Mashed Potatoes

  1. Preheat oven to 350u0b0F. Line an 8x4 inch loaf pan with foil.
  2. In a large bowl, combine ground beef, onion, carrot, egg, 2 tbsp chutney, Worcestershire sauce and herbs. Season. Place on a baking tray. Bake for 20 mins.
  3. Meanwhile, for the mashed potato topping, cook potatoes in boiling, salted water for 15-20 mins, until tender. Drain. Mash with milk and butter. Season.
  4. Remove meatloaf from pan. Place on a baking tray lined with parchment paper. Brush with remaining chutney. Top with mashed potatoes and bake for 10-15 mins, until golden. Serve sliced with steamed green beans and extra chutney.
