Whelks In Tomato Sauce

  1. Heat a tablespoon of butter in a pan, add finely chopped onion and garlic. Saute a little, and add coriander stalks, chopped tomatoes, and simmer for about 5 minutes. Then, grind the mixture in the blender, and return to pan.
  2. Add the whelks, season to taste with salt, pepper, and a few drops of Tabasco.
  3. Add the wine, and cook for about 20 minutes, stirring occasionally. Add a little water if mixture is too dry.
  4. Check the seasoning, and garnish with fresh coriander.
