Thyme And Parmesan Popover

  1. Preheat oven to 450 degrees.
  2. Place a regular muffin tin (or a popover tin, if you have one) in the oven for 10 minutes.
  3. In a medium bowl, mix the eggs and milk
  4. In a large bowl, mix the flour, salt, pepper, Parmesan and thyme
  5. Add the liquid egg mixture to the flour mixture and stir until just combined/smooth.
  6. After 10 minutes, remove the muffin pan from the oven and place 1 teaspoon of melted butter into 7 muffin tins
  7. Quickly pour in the batter into the tins about 3/4 of the way
  8. Cook for 10 minutes.
  9. Do NOT open oven. Reduce heat to 350 degrees
  10. Cook for an additional 15-20 minutes, or until the popovers are golden brown.
