Gluten-Free Oatmeal-Raisin Bread

  1. In a medium-sized bowl, combine flour, oats, sugars, baking soda, cinnamon, salt, raisins and pecans. Set aside.
  2. In a large mixing bowl, beat eggs, applesauce, yogurt, butter and vanilla.
  3. Gradually stir the dry ingredients into the wet mixture until just combined.
  4. Pour batter into a buttered 9"x5" loaf pan and bake at 350 degrees for approximately 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.
  5. If desired, serve with a drizzle of powdered sugar icing.
