Gluten-Free Oatmeal-Raisin Bread
- 2 cups gluten free all purpose flour
- 1 cup gluten-free rolled oats
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup raisins
- 1/2 cup pecans coursely chopped
- 2 large eggs
- 1 cup unsweetened applesauce
- 6 ounces honey-flavored greek yogurt
- 4 tablespoons melted butter
- 1/4 teaspoon vanilla
- In a medium-sized bowl, combine flour, oats, sugars, baking soda, cinnamon, salt, raisins and pecans. Set aside.
- In a large mixing bowl, beat eggs, applesauce, yogurt, butter and vanilla.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Pour batter into a buttered 9"x5" loaf pan and bake at 350 degrees for approximately 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.
- If desired, serve with a drizzle of powdered sugar icing.
