Chicken Tacos With Guacamole
- 2 avocados ripe, stoned, flesh removed
- 1 lime
- 1 onion small, peeled and finely chopped
- 2 garlic cloves crushed
- 1 red chili sliced into rings
- 4 taco shells
- 1 tablespoon olive oil
- 1 pound chicken breast cut into bite-size pieces
- 1 red pepper deseeded and chopped
- 1 mango peeled, stoned and chopped
- 1 ounce parsley
- 3 leaves
- 4 lettuce leaves curly, torn
- Preheat the oven to 350u0b0F. For the guacamole, place the avocado in a bowl with the lime juice, onion and garlic. Blend until smooth using a stick blender. Stir the chili through the mixture. Season to taste with salt and freshly ground black pepper.
- Bake the taco shells for 3-4 mins.
- Heat the oil in a frying pan, add the chicken and stir-fry for 5 mins. Add the pepper, mango and chopped parsley and cook for another 3 mins. Season to taste with salt and freshly ground black pepper.
- Fill the tacos with the chicken mixture and the lettuce. Garnish with the extra parsley leaves. Serve with the guacamole.
