Pineapple Bbq Sauce
- 4 1/2 cups ketchup
- 6 teaspoons chili powder
- 2 teaspoons cumin
- 14 ounces juice can pineapple chunks -, drained and set aside should equal just under 1 cup
- red wine added into the Pineapple juice until equals 1 cup
- 1 1/2 cups brown sugar
- 3/4 cup vinegar
- 4 tablespoons mustard
- 3 teaspoons worchestershire
- 1/2 cup onions finely chopped
- 3 teaspoons garlic minced
- 2 tablespoons grape seed oil
- 1 cinnamon stick
- Heat oil in a large stock pot over med heat, saute onions until translucent.
- Add chili powder, cumin and garlic in pot and cook for 1 min.
- ***DO NOT ALLOW ONIONS TO BROWN OR THE TEXTURE OF THIS SAUCE WILL BE OFF***
- Finely chop or toss pineapples into a blender and pulse a few times
- Stir in pineapple along with everything else and simmer for 45 mins - 1 hour stirring occasionally to prevent burning
