Vanilla Almond Waffles With Peach Brown Sugar Compote
- 3 cups of peaches, peeled and sliced
- 2 tablespoons of brown sugar
- 1 tablespoon of lemon juice
- 1 tablespoon of water
- 3/4 cup of flour
- 1/4 cup of corn starch
- A teaspoon of sugar
- 1/2 teaspoon of baking power
- 1/2 teaspoon of kosher salt
- 1/4 teaspoon of baking soda
- A cup of 2% milk
- 4 tablespoons of butter, softened
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- An egg yolk
- Two egg whites, whipped
- Put the peaches, brown sugar, lemon juice and water into a bread machine. Select the "jam" function, and let the device do all of the work. If you don't have a bread machine, you can mix the ingredients in a saucepan and cook over medium heat for 15 to 20 minutes, stirring frequently.
- Combine flour, corn starch, sugar, baking powder, kosher salt and baking soda in a bowl.
- In a separate bowl, mix together the milk, butter, vanilla extract, almond extract and egg yolk.
- Whip egg whites until soft peaks form and fold egg whites into batter.
- Cook batter in a waffle iron.
- Once done, top waffles with compote, sprinkle with powdered sugar and serve.
