Hearty Apple Oatmeal Muffins

  1. Pre-heat your oven to 400 degrees F and line your muffin pan cups with paper liners. I use "Unbleached Totally Chlorine-Free (TCF)" liners to bake in, then place my muffins in decorator papers for serving.
  2. Cut the apple into small pieces (about 2 cups).
  3. In a small bowl, whisk the egg lightly. Add the buttermilk, vanilla, yogurt and oil, and whisk until combined.
  4. Add the oats to the wet ingredients and let them rest for 15 minutes. This will keep the oatmeal from being too dry.
  5. In a large bowl, whisk the dry ingredients together. Flour, sugar, baking powder, salt and spices.
  6. Fold the chopped apples into the dry ingredients. This will help keep them from sinking to the bottom of the bowl when mixed with the wet ingredients.
  7. Pour the wet ingredients into the dry ingredients. Using a fork or large spoon or spatula, blend briefly. Do not over mix.
  8. Fill the muffins cups completely full. Sprinkle the tops with a little sugar.
  9. Place the muffins in the oven and immediately reduce the heat to 350 degrees F.
  10. Bake the muffins for 25 to 30 minutes, until a toothpick inserted in the middle comes out clean.
  11. Remove from the oven and as soon as possible move them to a cooling rack.
