Judy'S Old Fashion Banana Nut Bread
- 6 bananas
- 4 eggs
- 1/4 teaspoon salt
- 2 teaspoons soda
- 2 teaspoons cinnamon
- 1 teaspoon ground cloves
- 4 cups all purpose flour sifted
- 2 cups pecans chopped
- Cream together Butter and Sugar. Add eggs, one at a time, beating well after each addition. Sift dry ingredients together and add to creamed mixture. Add bananas and nuts. Pour into two well greased loafpans. Bake at 250 to 300 degrees from 1 to 2 hours. Chop additional pecans for sprinkling on top of each loaf before baking.
- Place in heated oven and watch carefully. When bread turns brown, test with a cake tester. Bread is ready when cake tester comes out clean.
- Allow to cool at room temperature and remove from pan. Mom always kept the loaves in the refrigerator and they keep for several days without drying out. Wrap in plastic wrap after totally cool.
