Classic Waldorf Salad
- 2 or 3 Washington Red or Golden Delicious apples, cored and diced to measure 2 c.
- 1 Tbsp. sugar
- 1/2 tsp. lemon juice
- dash of salt
- 1 c. sliced celery
- 1/2 c. chopped walnuts
- 1/4 c. mayonnaise
- 1/2 c. whipping cream, whipped
- salad greens
- 1 (15 1/2 oz.) can crushed pineapple
- 1 (3 oz.) pkg. cherry-flavored gelatin
- 1 (11 oz.) can mandarin oranges, drained
- 1 (8 oz.) carton creamed cottage cheese
- 1 (4 1/2 oz.) carton frozen whipped topping, thawed
- lettuce leaves
- Pour the pineapple with its juice into a small saucepan.
- Cook over medium heat until juice comes to a boil, about 4 to 6 minutes.
- Remove from heat.
- Pour gelatin mix into large, glass mixing bowl.
- Carefully pour pineapple and juice into bowl.
- Stir with a wooden spoon until gelatin is dissolved.
- Chill in the refrigerator until it is cool and begins to thicken, about 2 hours.
