Grilled Salmon With Thai Slaw
- 2 tablespoons fish sauce
- 3 teaspoons palm sugar finely grated, or packed brown sugar
- 1 tablespoon lime juice
- 1 red chili long, finely chopped, seeds removed, if desired
- 1/4 head red cabbage finely sliced
- 1 carrot peeled, julienned or grated
- 4 spring onions sliced
- 6 baby radishes finely sliced
- 1/2 bunch mint leaves
- 28 ounces salmon steaks
- 3 teaspoons olive oil
- cracked black pepper
- sea salt
- Preheat grill to medium-high heat.
- Place fish sauce, sugar, and lime juice in mixing bowl; stir until sugar dissolves. Add chili, cabbage, carrots, spring onions, radish and mint leaves. Toss well to combine.
- Drizzle salmon with oil; season with salt and pepper. Cook for 3-4 mins each side for medium. To serve, place salmon cutlets on plates with a generous portion of slaw.
