Corned Beef With Potatoes And Vegetables
- 2 1/4 pounds corned beef
- 1 tablespoon brown sugar
- 1 tablespoon malt vinegar
- 5 whole cloves
- 8 pearl onions trimmed and peeled
- 8 small potatoes halved
- 12 carrots with green tops, peeled, tops left on
- 5 ounces frozen peas
- fresh parsley leaves to garnish
- Place beef, sugar, vinegar and cloves in a large saucepan. Add enough water to cover. Bring to a boil. Reduce heat, cover and simmer very gently for 1 1/4 hours, or until a skewer inserted into beef can be easily removed. Remove beef from liquid, cool slightly and slice.
- Strain cooking liquid and return to saucepan. Season to taste. Add onion and potatoes and simmer 10 mins. Add carrots and peas and simmer 10 more mins, until vegetables are tender. Divide vegetables between serving bowls with sliced beef and ladle a little of the cooking liquid on top. Sprinkle with parsley to serve.
