Citrus Plantain Fritters

  1. Preheat oven to 400 degrees Fahrenheit. In a medium bowl, mash plantains with a fork or a potato masher until no large chunks remain. Add cilantro, spices, egg and flour. Mix together until completely combined.
  2. In a large frying pan, add olive oil. Turn on medium high heat. Once oil is shimmering, add 1/4 cup of plantain batter per fritter to oil. Each batch should consist of about 4-5 fritters so as not to overcrowd pan. Once fritters are golden brown (usually takes 30 seconds-1 minute) flip over and continue to cook on other side until golden brown. Remove from oil and place on a large baking sheet.
  3. Repeat for the rest of the batter ( makes about 8 fritters). Once all fritters are done an on baking sheet, place in over for 10 minutes. Serve immediately.
  4. Meanwhile, make aoli. Add 1/4 cup of greek yogurt to a small bowl. Add paprika, lime and garlic. Mix together until evenly combined. Refrigerate until ready to serve.
