Paprika Chicken And Pasta With Simple Salad
- 2 boneless, skinless chicken breasts medium, cubed
- salt and ground black pepper
- cooking spray
- 1 onion small, cut into half moons
- 1 green bell pepper chopped
- 1 clove garlic minced
- 1 tablespoon paprika
- 1 teaspoon pepper flakes arbol chile, optional
- 1 cup water
- 1 tablespoon chicken bouillon
- 1/4 cup light sour cream
- 250 grams noodles pasta, cooked
- 1/2 cup parsley minced
- 1 tablespoon butter
- 1/2 cup cucumbers diced

- 8 leaves red leaf lettuce cut into bite-sized pieces
- 1 tomato diced
- 2 tablespoons onion diced
- 1/4 cup cucumbers diced
- 1 tablespoon olive oil
- 1 tablespoon white vinegar
- salt and ground black pepper
- Add the butter and parsley to the cooked pasta. Season with salt and pepper and set aside.
- Saute the chicken on high heat in a skillet spritzed with cooking spray. Stir constantly until golden brown on all sides. Remove from skillet and set aside.
- Spray the skillet with more cooking spray and saute the onion, garlic, and green pepper, stirring constantly. Add the water, bouillon, paprika, chile flakes, and chicken after 5 minutes. Stir to mix well. Let cook 10 minutes on medium-low heat.
- When the chicken is cooked through, stir in the cream and serve, placing the chicken over the pasta. Decorate with the cucumbers.
- Prepare the salad by combining the lettuce, tomato, onion, cucumbers, olive oil, and vinegar. Mix carefully to coat and season with salt and pepper.
