Flat Iron Steak With Porcini Sauce
- 4 flat iron steak 6-8oz each
- 1/3 cup extra virgin olive oil
- 1 shallots large
- 2 cloves garlic
- 1 cup ketchup
- 1/2 cup beef stock
- 1/4 cup worcestershire sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- dried porcini mushrooms handfull of
- Preheat griddle, season steaks with salt and pepper, and coat with EVOO. Cook for 10 min turning only 1 time - transfer to a cutting board and let rest
- Meanwhile heat 2 tbsp EVOO over med-high heat. Stir in shallots and garlic and cook for 2 min; season with salt and lots of pepper. Add ketchup, beef stock, worocestershire, vinegar, sugar and mushrooms.
- Bring to a boil and lower heat to simmer for 20 min - Puree mixer with immersion blendernnTop the steaks with sauce
