Spinach Mushroom & Cheese Quiche

  1. Mix flour and salt.
  2. Beat oil and water with whisk to merge.
  3. Pour the wet ingredients into flour and mix.
  4. Put into 9" dish pressing the dough down and up the sides.
  5. Heat the oil in a skillet and cook the shallot for 1 minute.
  6. Add in the mushrooms and cook for 2 minutes.
  7. Season with salt, pepper and paprika.
  8. Add the spinach and cook until wilted.
  9. In the last minute, add the orange pepper to soften just a little bit.
  10. In a bowl, beat the eggs with the milk. .
  11. Add the vegetables, cheese to the eggs and mix. Next, pour the quiche mixture into your crust.
  12. Bake at 400F until done. Bake for 15 - 18 minutes.
  13. With about 2 minutes left of cooking, top the quiche with a light sprinkling of the cheese.
