Sweet Potatoes
- 4 lb. sweet potatoes
- 1/3 c. margarine
- 1/3 c. packed brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3 eggs, slightly beaten
- 1/3 c. fresh orange juice
- 3 Tbsp. brandy
- 2 Tbsp. grated orange peel
- 1 Tbsp. grated lemon peel
- Pierce potatoes.
- Place paper towels in microwave.
- Cook potatoes on High 15 to 18 minutes, until soft when pierced. Rearrange once or twice.
- Remove and let stand 5 minutes.
- Peel potatoes.
- In a large bowl, melt margarine on High 45 to 60 seconds.
- Add potatoes and mash thoroughly.
- Add rest of ingredients and mash thoroughly.
- Spoon into buttered 2-quart casserole and microwave on High 5 minutes.
- Reduce power to Medium and microwave 8 to 12 minutes.
- Garnish with orange slices and almonds.
