Sweet Potatoes

  1. Pierce potatoes.
  2. Place paper towels in microwave.
  3. Cook potatoes on High 15 to 18 minutes, until soft when pierced. Rearrange once or twice.
  4. Remove and let stand 5 minutes.
  5. Peel potatoes.
  6. In a large bowl, melt margarine on High 45 to 60 seconds.
  7. Add potatoes and mash thoroughly.
  8. Add rest of ingredients and mash thoroughly.
  9. Spoon into buttered 2-quart casserole and microwave on High 5 minutes.
  10. Reduce power to Medium and microwave 8 to 12 minutes.
  11. Garnish with orange slices and almonds.
