Chewy Pistachio Pretzel Chocolate Chip Cookies

  1. Melt butter in a medium saucepan over low heat.
  2. In a medium bowl, sift the flour, salt, baking soda, and ground coffee.
  3. In another bowl, mix the chocolate chips, pretzels, dark chocolate, and pistachios.
  4. Pour the butter into the work bowl of a standing mixer or a large mixing bowl.
  5. Add the granulated sugar and brown sugar, then cream on medium speed (will take a few minutes).
  6. Add the egg, egg yolk, milk, and vanilla extract.
  7. Mix them until everything is well combined.
  8. Slowly add the flour mixture.
  9. Once that has been incorporated, add stir in the chocolate chip and pretzel mixture.
  10. Chill the dough at least an hour.
  11. Heat oven to 375.
  12. Scoop the dough out in about 1/4 cup-size portions.
  13. Bake about 12 minutes, or until golden brown.
  14. Cool on wire racks.
  15. Pour the 1 cup of milk into a glass.
  16. Dunk cookie in milk for 6-13 seconds before eating.
