Johnnycake

  1. In a heavy-based pan over low heat, dissolve the sugar with the molasses, spices and butter.
  2. Slowly and carefully bring the mixture to a boil.
  3. Cool it to room temperature, then mix in the baking powder.
  4. Place the flour in a bowl with a pinch of salt and make a well in the center.
  5. Pour in the cooled syrup mixture and the egg and stir from the center to incorporate the flour.
  6. Turn the dough out onto a floured surface and knead, then wrap it in wax paper and refrigrate it for about 30 minutes.
