Pork Souvlakia
- 1 1/2 pounds pork - cubed
- 1 onion - sliced
- 3 cloves garlic - chopped
- 1/2 teaspoon salt
- 1 dash black pepper
- 1/2 cup grape tomatoes - processed
- 1 dash dried oregano
- 1 dash dried thyme
- 1 dash dried rosemary
- 1 dash paprika
- 1/4 cup chicken broth
- 1/4 cup wine
- 1 tablespoon butter
- olive oil for drizzling
- 1 cup sour cream
- 1 handful fresh dill
- 2 celery stalks
- 1 teaspoon capers - plus a little caper juice
- 1/4 lemon

- Combine all of the seasonings in a small bowl.
- Place the cubed meat in a container and pour the seasoning over the meat. Work the seasonings into the meat; cover and refrigerate for at least one hour.
- Heat a large frying pan with a drizzle of olive oil and the tablespoon of butter.
- Saute the pork in the hot frying pan until it is golden on all sides - about 10 minutes.
- Remove from the pan and set aside.
- Add the onion and the garlic; saute until the onion is slightly golden. Place the pork back in the pan with the onion and garlic. Add the chicken broth, wine and the tomatoes.
- Simmer for about 40-45 minutes until the meat is tender.
- Sour Cream Dill Dressing - for the Salad or Flat Bread:
- Combine all of the above ingredients in a food processor and process until smooth.
- Plate on either a flat bread or lettuce leaves and spoon the sour cream sauce over the leaves.
