Tuna Burgers With Avocado And Corn Salsa
- 2 tablespoons olive oil
- 1 onion finely chopped
- 2 cloves garlic minced
- 1/2 teaspoon chili flakes
- 13 1/2 ounces tuna in oil drained
- 1/3 cup breadcrumbs
- 2 tablespoons cilantro leaves fresh
- 1 egg
- 3/4 cup creamed corn canned
- 1 avocado small, pitted, peeled, chopped
- 1 small tomato finely chopped
- 2 tablespoons fresh cilantro chopped
- 1 red chili deseeded, finely chopped
- 1/2 lemon juiced
- 2 1/2 cups baby arugula to serve
- 4 burger buns toasted, to serve
- Heat 1 tbsp oil in a large frying pan over medium heat. Saute onion, garlic and chili flakes for 2-3 mins, until tender. Let cool then combine with tuna, breadcrumbs, cilantro and egg. Season then shape into 4 patties.
- To make the avocado and corn salsa, combine all ingredients. Season to taste.
- Heat remaining oil over medium heat. Cook patties for 4-5 mins per side, until browned and cooked through. Place arugula on bottom buns. Top with a tuna patties, salsa and top buns. Serve.
