Papa Rusa (Chilean Russian Potato Salad)

  1. Boil the potatoes whole for 15 minutes.
  2. Let them cool for 15 minutes.
  3. Peel the potatoes and diced them in 1-inch cubes. Steam them for 5-7 minutes or until cooked.
  4. Peel the carrots and boil for 10 to 15 minutes.
  5. Drain and cool. Dice the carrots.
  6. In large bowl, combine the carrots with the potatoes. (I worked on this process the night before and refrigerated the potatoes.)
  7. The potatoes must be cooled down before adding the rest of the ingredients or else it turns into mashed potatoes.
  8. Add the rest of the ingredients.
  9. Slowly mix with a spatula until well blended.
