Prune Cake - Don'T Turn Up Your Nose, It'S Better Than You'D Ever Think!!!
- 2 cups flour sifted
- 3 eggs
- 1 1/2 cups sugar
- 1 cup canola oil
- 1 teaspoon soda
- 1 cup buttermilk room temperature
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon allspice
- 1 cup prunes cooked stewed, chopped fine, mixture will be thick
- 1/2 teaspoon nutmeg
- 1 cup chopped pecans
- 1 teaspoon salt
- Mix all dry ingredients in large bowl
- In a medium mixing bowl beat eggs, oil, buttermilk
- Add to dry ingredients
- Add vanilla and prunes
- Stir in pecans
- Pour batter in 9x12-inch baking pan, that has been greased and floured
- Bake at 325 for 40 minutes or until knife inserted in center comes out clean
- Serve plain or your favorite butter-cream frosting recipe.
