Pork Mole Lettuce Wraps
- 1 fresh leg of pork 402D, outside muscle
- 1/2 cup kosher salt
- 1/4 cup black pepper fresh ground
- 1/4 cup smoked paprika
- 1/4 cup dark brown sugar
- 2 ounces ancho chile powder
- 2 ounces granulated garlic
- 2 ounces onion powder
- 1 gallon pork stock prepared
- 2 quarts dark beer
- 4 white onions small, peeled, rough chop
- 2 cloves garlic peeled
- 4 celery ribs, rough chop
- 4 medium carrots rough chop
- 1/2 cup pumpkin seeds
- 1/4 cup sesame seeds
- 4 cinnamon sticks
- 4 pods star anise
- 1 ounce allspice berries
- 6 bay leaves
- 6 ancho chiles soaked, seeded, and stemmed
- 6 guajillo chiles soaked, seeded, and stemmed
- 2 chipotle chile in adobo sauce
- 8 ounces mexican chocolate
- 1. In mixing bowl, combine all ingredients and mix well to combine
- 2. Completely rub mix rub over pork and let sit for a minimum of 4 hours to overnight
- 1. Preheat a 350u0b0F oven
- 2. In large rondeau pot, heat oil and evenly sear all sides of pork then remove set aside
- 3. Add the vegetables and spices and caramelize, add the pork back in
- 4. Add the beer, stock, chilies, and chocolate and bring to a simmer
- 5. Cover and place in oven and cook until an internal temperature of 185u0b0F, approximately 8 hours
- 6. Remove the pork and pull the meat
- 7. Strain and skim braising liquid, reduce if necessary, reserve
- 8. Combine pork with strained braising liquid and mix well to combine
- 9. Season as needed
- 1. In center of butter lettuce cups place pulled pork
- 2. Garnish with chopped green onions
