Best Ever Lemony Lentil Soup
- 1 tablespoon olive oil
- 1 spanish onion large, diced
- 4 cloves garlic minced
- 3 carrots large, diced
- 3 celery stalks diced
- 4 cups water
- 1 cup red lentils dried, rinsed
- 1 tablespoon cumin
- 1 tablespoon curry powder
- 1/4 cup lemon juice
- salt
- Over medium heat, heat oil in a Dutch oven or saucepan. Add the onions, garlic, carrots and celery. Saute until onions are translucent (about 5 minutes).
- Add the remaining ingredients except for the lemon juice to the pot. Bring the soup to a boil and then turn it down to a simmer and cover.
- Let the soup simmer for 30 minutes. If you're using a crockpot, set it for 4-6 hours on low.
- Remove the soup from the heat and stir in the lemon juice. Serve and enjoy!
- If you like it spicy, add some paprika or hot sauce.nnThis soup freezes really well. Portion it into shallow containers and let it cool before covering and placing in your freezer.
