Sauteed Chickpeas With Mixed Greens
- Green mix (baby kale +baby spinach+chard)
- 120 g chickpea
- 1 small onion minced
- few garlic pieces minced
- fresh ginger minced
- 1 Tbs and half olive oil divided
- 1 tsp vinegar
- Spicesnalt, black pepper, ground cumin, and cayenne pepper.
- In a food processor, put onion, garlic and ginger, and mince them well.
- Heat a skillet on medium heat, add 1 Tb of olive oil.
- And onion, garlic, and ginger, and saute them for 3-5 minutes.
- Now add chickpeas, spices, and saute for 5 minutes.
- Remove from the stove, and aa everything in the skillet on your plate.
- In the same skillet, add half Tb of olive oil, add the greens, vinegar, salt, and black pepper.
- Saute them for 3 minutes, and them to chickpea, and serve immediately.
