Ham Filled Potato Salad

  1. In medium saucepan, bring water and onion to rolling boil; add potato flakes and set aside.
  2. In large bowl, combine mayonnaise, sour cream, vinegar, mustard and pepper.
  3. Reserve 1 egg for garnish; chop remaining eggs.
  4. To mayonnaise mixture, add eggs, celery, pimento and mashed potato; stir to combine.
  5. Slice reserved egg.
  6. Line 1 1/2-quart bowl with Saran Wrap then arrange egg on bottom of bowl.
  7. Spoon half of potato mixture into bowl.
  8. Layer ham evenly over potato mixture and top with remaining potato mixture spreading evenly.
  9. Cover with foil and refrigerate overnight.
  10. To serve, unmold on serving plate.
  11. Makes 6 servings.
