Lemon Kale Salad With Toasted Oats

  1. Add kale leaves to a medium bowl, and add 1 tablespoon olive oil and sea salt. Using your hands, massage the kale leaves by rubbing them between your fingers to soften. Add garlic paste, Parmesan cheese, lemon juice, and black pepper, and toss until kale is evenly coated.
  2. In a large pan, heat up remaining 1 tablespoon olive oil on medium-low heat. Add oats, and cook for 3-5 minutes, stirring frequently to prevent burning. Remove oats from pan when they are crisp and golden. Top off salad with toasted oats and serve.
