Spinach And Lentil Salad
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon minced garlic
- 1 teaspoon tomato paste
- 1/4 teaspoon ground cumin
- 3 tablespoons olive oil
- 4 ounces baby spinach
- 15 ounces red lentils rinsed and drained
- 1/2 cup cucumber diced
- 1/2 cup radish halved and sliced
- 1/4 cup red pepper diced
- 2 tablespoons chives fresh chopped
- 1 teaspoon thyme leaves fresh chopped
- Whisk together lemon zest, lemon juice, garlic, tomato paste, cumin and olive oil. Season.
- Arrange spinach on a serving platter. Toss together lentils, cucumber, radish, red pepper, chives and thyme with 1/2 the dressing then arrange over spinach. Drizzle with remaining dressing.
