Poulet Del Monico De Jean(Chicken Del Monico By Gene)
- boneless chicken breasts
- thin sliced Prosciutto ham or West Phalian ham
- 1 stick butter
- 8 oz. pkg. soft cream cheese
- 2 oz. Asiago cheese, shredded
- chopped chives, parsley, garlic, thyme and paprika
- Mozzarella or Provolone, shredded
- 1 oz. white sweet wine
- 30 or 2 oz. capers (about)
- 2 oz. lemon-squeezed juice
- mushrooms (may be added inside chicken, but must be cooked and drained first)
- Butterfly thin and pound out meat. Layer ham, cream cheese and spice mix. Add 1 thin pat of butter. Roll meat to enclose ingredients. Seal on all sides. Toothpick if necessary or tie with string. Place into walled casserole dish or pan. Drizzle wine, 1/2 stick melted butter and lemon juice over chicken rolls. Cover with other cheese and 1 more thin slice of ham. Bake at 350u0b0 for 30 to 40 minutes. Broil to brown cheese on top. Garnish with lemon slices and sprinkle paprika on top.
