Zucchini Quiche
- 2 cups zucchini chopped
- 2 cups tomatoes chopped
- 1 onion medium, chopped
- 2 cloves garlic chopped
- salt to taste
- pepper to taste
- 1 cup mozzarella shredded
- 2/3 cup bisquick reduced fat
- 1/4 cup milk
- 4 egg whites
- Preheat oven to 400 degrees.
- Spray a 9 inch pie platre with cooking spray. set aside.
- Saute garlic and onions until onion is translucent.
- Add Zucchini, Tomatoes, salt and pepper, continue to saute until zucchini are soft.
- Turn up the heat until ALL the liquid is gone. set aside.
- Note: the saute mixture can be made ahead of time. Just make sure you drain any liquid that forms.
- In a large bowl, beat egg whites, then add milk, cheese and bisquick.
- Stir to combine.
- Now add the drained zucchini mixture and stir well.
- Pour into pie plate.
- Cook for about 30 minutes or until a knife comes out clean when inserted into the center.
