Apple Yeast Bread

  1. Pour all the ingredients into a food processor.
  2. Knead on medium speed for 7 or 8 minutes to get a smooth paste. (If you do not have a food processor, you can knead the mixture by hand.)
  3. Place the dough on a floured baking surface, and form a ball.
  4. Transfer to a lightly oiled bowl, cover with plastic wrap, and allow to rest for 5 hours.
  5. Return the dough to your work surface, and give it the desired shape such as a ball, or a long loaf.
  6. Place the bread in a proofing basket covered with a lightly floured tissue (or gently fold into a floured cloth).
  7. Allow to rise for 10 to 13 hours in a 20/24u0b0C moderate climate covering the basket with a plastic bag.
  8. Preheat oven to 200u0b0C (390u0b0F).
  9. Gently transfer the bread on a baking sheet covered with greaseproof paper, and bake for 30-35 minutes.
