Apple Yeast Bread
- 3 1/8 cups wheat flour
- 2 cups apple based yeast, See Apple-based Yeast recipe
- 1 5/16 teaspoons fine salt
- 5/8 cup water
- Pour all the ingredients into a food processor.
- Knead on medium speed for 7 or 8 minutes to get a smooth paste. (If you do not have a food processor, you can knead the mixture by hand.)
- Place the dough on a floured baking surface, and form a ball.
- Transfer to a lightly oiled bowl, cover with plastic wrap, and allow to rest for 5 hours.
- Return the dough to your work surface, and give it the desired shape such as a ball, or a long loaf.
- Place the bread in a proofing basket covered with a lightly floured tissue (or gently fold into a floured cloth).
- Allow to rise for 10 to 13 hours in a 20/24u0b0C moderate climate covering the basket with a plastic bag.
- Preheat oven to 200u0b0C (390u0b0F).
- Gently transfer the bread on a baking sheet covered with greaseproof paper, and bake for 30-35 minutes.
