Apple Cake With Cinnamon And Fennel

  1. Cut the apples into small pieces, and place in a bowl. Sprinkle with lemon juice and port wine. Add sugar, honey, cinnamon, and fennel. Mix well, and refrigerate for 30 minutes.
  2. Preheat the oven to 180 degrees Celsius.
  3. Grease a round cake pan with margarine, and sprinkle with flour. Set aside.
  4. Beat the eggs with the oil. Add to the apple mixture, and mix very well.
  5. Add the flour and baking powder, and mix well, without whipping.
  6. Place the dough in the cake pan, and bake for about 40 minutes.
  7. Check the cooking, remove from the oven, and unmold.
