Apple Cake With Cinnamon And Fennel
- 4 apples medium, finely chopped
- 1 lemon juice
- 1/2 cup port wine
- 200 grams brown sugar
- 1 tablespoon honey
- cinnamon to taste
- fennel to taste
- 4 eggs
- 1/2 cup oil
- 3 cups flour
- 1 teaspoon baking powder
- Cut the apples into small pieces, and place in a bowl. Sprinkle with lemon juice and port wine. Add sugar, honey, cinnamon, and fennel. Mix well, and refrigerate for 30 minutes.
- Preheat the oven to 180 degrees Celsius.
- Grease a round cake pan with margarine, and sprinkle with flour. Set aside.
- Beat the eggs with the oil. Add to the apple mixture, and mix very well.
- Add the flour and baking powder, and mix well, without whipping.
- Place the dough in the cake pan, and bake for about 40 minutes.
- Check the cooking, remove from the oven, and unmold.
