String Bean Falafels
- 2 7/8 cups frozen string beans defrosted
- 1/2 onion diced
- 2 garlic cloves diced
- 1 tablespoon cilantro or parsley, chopped
- 1/2 teaspoon chili powder
- 1/2 teaspoon turmeric
- 1 teaspoon cumin
- 1 tablespoon flour
- salt
- ground black pepper
- lemon juice squeeze of
- sesame seeds
- oil for frying
- Add the string beans to a food processor and roughly chop them.
- Add the onion, garlic, cilantro or parsley, chili powder, turmeric, cumin, and flour. Blend until everything is well combined.
- Salt and pepper to taste and squeeze in a few drops of lemon juice. Pulse together.
- With wet or oiled hands, pinch out sections from this dough, forming into balls about the size of a tablespoon. Then flatten the balls out. Sprinkle with sesame seeds. Lay out on a baking tray and refrigerate a bit.
- Heat up 2 fingers of oil in a skillet and fry the falafels on both sides until golden.
- Serve with Greek yogurt and a drizzle of olive oil.
