String Bean Falafels

  1. Add the string beans to a food processor and roughly chop them.
  2. Add the onion, garlic, cilantro or parsley, chili powder, turmeric, cumin, and flour. Blend until everything is well combined.
  3. Salt and pepper to taste and squeeze in a few drops of lemon juice. Pulse together.
  4. With wet or oiled hands, pinch out sections from this dough, forming into balls about the size of a tablespoon. Then flatten the balls out. Sprinkle with sesame seeds. Lay out on a baking tray and refrigerate a bit.
  5. Heat up 2 fingers of oil in a skillet and fry the falafels on both sides until golden.
  6. Serve with Greek yogurt and a drizzle of olive oil.
